Creamy Cilantro Lime Slaw

The vitamin and mineral content of raw purple cabbage is the most significant reason to consume this vegetable!  A single serving of raw purple cabbage contains Vitamin A, C, and K, folate, magnesium, potassium and cholesterol lowering benefits.  It also has sinigrin.  Studies show that sinigrin can be converted into allyl-isothiocyanate, or AITC. This isothiocyanate compound has shown unique cancer preventive properties with respect to bladder cancer, colon cancer, and prostate cancer.  EAT MORE PURPLE CABBAGE!!!


1 small head purple cabbage, shredded
1 heaping tsp Kosher salt
1 large handful cilantro, chopped
3-4 large scallions, thinly sliced
1 large jalapeno, stem and seeds removed, julienned or minced
5.3 oz container of honey Greek yogurt
1/2 C mayo of choice(there are so many healthy options)
3 T fresh lime juice
1 tsp lime zest
2 cloves garlic, minced
1/2 tsp cumin
Pepper to taste

Shredded cabbage and place in large strainer in the sink. Sprinkle the salt all over the cabbage and work it in with your hands. Allow to sit for at least 15 minutes to allow the cabbage to get mildly length.

In a small bowl, combine honey yogurt, mayo, lime juice, zest, garlic, and cumin.

In a large bowl, toss together cilantro, scallions, jalapeno, and cabbage. Cover with dressing and stir to combine.

Serve immediately or prepare up to one day in advance.
