Crock Pot Butternut Squash

Butternut squash is one of the most common varieties of winter squash. Like other winter squash, it has a hard exterior and firm flesh and is full of vitamin A, potassium and fiber.  It is a winter squash but harvested in the fall from its summer growing season.  

 

FullSizeRender (64)My kids really enjoy this as well when I mash it with Kerry Gold Butter or butter of choice.  It makes a great warm side dish.   Side dishes are always a challenge for me when time is short to prepare dinners around busy schedules

Ingredients:

1 whole butternut Squash

Directions:

Place squash in slow cooker and cook until soft and easy to pierce, about 4-5 hours on high or 6 – 8 on low.  When cooled cut in half and scoop out seeds.
