Mexican Street Corn



Do you have any favorite 4th of July dishes? My family loves corn on the cob. Check out this yummy recipe:


4 corn – washed and husk removed
1/3 C nonfat greek yogurt
2 tsp lime juice
1 tsp diced garlic
1/2 tsp chipotle chili powder to taste
1/4 tsp salt to taste
1/8 tsp black pepper
1/4 C chopped cilantro
1/4 C (1oz) queso fresco or cotija cheese or sub feta
Fresh lime


Preheat broiler or grill.

Spray corn with cooking spray.

Transfer to baking sheet lined with foil and sprayed.

Place in broiler for 5 to 7 minutes, until tops begin to brown as desired  Turn corn about third of the way and brown the tops again, repeat once more, until you’ve done three rounds in the corncobs are browned to your liking.

While corn is cooking, mix together your remaining ingredients except cilantro, cheese and paprika.  Adjust chili powder to taste it can get spicy.  You can also use Cayanne or regular chili powder if you prefer.

Brush the yogurt mixture all over the corncobs.

Mixed together crumbled cheese and cilantro.  Place it on a plate or dish and roll your hot coded corn in the mixture to coat in the cheese and cilantro.

Sprinkle with paprika for color, and serve with fresh wedges of lime.
