Summer Kale Salad with Blueberry-Balsamic Vinaigrette


KALE is the KING of healthy greens.  It is one of the healthiest and most nutritious plant foods in existence.

A single cup of Kale has 206% of the RDA for vitamin a 684% vitamin K, 134% of vitamin C, 9% of vitamin B6, 26% of manganese, 9% calcium, 10% copper, 9% potassium, 6% magnesium and 3 grams of protein.  It also contains Omega 3 fatty acids and powerful antioxidants and lowers cholesterol and contains many cancer fighting substances and much more.

It has become very popular in the weight-loss world.  It provides a significant bulk because of the fiber, water and protein that helps keep you full.

I like making hearty salads with KALE because the leaves don’t get soft as quickly.  This makes a great grab and go salad option.

Summer Kale Salad with Blueberry-Balsamic Vinaigrette


2 bunches of Kale
1/2 tsp salt
2 ears sweet corn,  shocked and kernels cut from Cobb
1 C fresh blueberries
1 C cherry tomatoes, halved
4 oz chèvre
1/4 C sliced almonds

Combine all ingredients in a large bowl

Blueberry-Balsamic Vinaigrette
1/2 C fresh blueberries
1/4 C balsamic vinegar
1 T honey
2 tsp Dijon mustard
Salt and pepper
6 T extra virgin olive oil

Blend all ingredients together then toss in salad and ENJOY!
